The iconic Watsons Bay Hotel was recently purchased from the Doyle Family by Arthur Laundy in collaboration with Fraser Short.
The aim was to reinvent the destination venue, increase its turnover and offer an updated menu and function capabilities. The new venue direction was directed by Fraser Short and implemented by Jeremy Bull of Alexander & Co (architect and designer). The works involved the modification and establishment of a new TAB and gaming room in the front bar and the fitout of a new function centre within the ground floor of the hotel room. This new function centre is the focal part of the new works and includes all-new wall panelling, bespoke joinery, ceiling acoustic panels and well considered furniture selected by Caroline Choker.
Whilst undertaking the works, the existing hotel traded with 90% occupancy and an operation front bar, outdoor bar, and outdoor bistro and beer garden. The project was successfully delivered on time, within the client's budget and to the highest standard.
